    Prepare the Vegetables

    In a skillet over medium heat, add butter and sauté the diced bell peppers and onions until softened, about 5 minutes.

    Add Ham and Chiles

    Add the diced ham and your choice of red and/or green chile to the skillet. Cook for an additional 2-3 minutes, stirring occasionally.

    Beat the Eggs

    In a bowl, whisk together the eggs, salt, and pepper until well combined.

    Cook the Omelette

    Pour the egg mixture over the sautéed ingredients in the skillet. Cook on low heat until the edges start to set, then gently lift the edges with a spatula to allow uncooked egg to flow underneath.

    Add Cheeses

    Once the eggs are mostly cooked, sprinkle the cheddar and jack cheeses over one half of the omelette. Allow it to cook for another minute until the cheese melts.

    Fold and Serve

    Carefully fold the omelette in half over the cheese. Slide it onto a plate and serve hot.
