Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips to make fries.

  2. 2

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 3

    Fry the Potatoes

Carefully add the potato strips to the hot oil in batches and fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Assembling the Dish

  1. 4

    Layer the Fries

Place the fried potatoes on a baking sheet or oven-safe dish.

  2. 5

    Add Cheese and Chiles

Sprinkle the shredded cheddar cheese evenly over the fries, followed by the diced green chiles.

  3. 6

    Melt the Toppings

Place the baking sheet in a preheated oven at 400°F (200°C) for about 5-10 minutes, or until the cheese is melted and bubbly.

  4. 7

    Garnish and Serve

Remove from the oven and top with sour cream, chopped green onions, and sliced jalapeños if desired. Serve immediately.
