    Prepare the Hash Browns

    In a skillet over medium heat, cook hash browns according to package instructions or until golden brown and crispy. Set aside.

    Beat the Eggs

    In a mixing bowl, crack the eggs and beat them well. Add salt and pepper to taste.

    Cook the Omelette

    In a non-stick skillet, heat a little oil or butter over medium heat. Pour in the beaten eggs and cook for about 2 minutes, or until the edges begin to set.

    Add Fillings

    Sprinkle the diced ham, cheddar cheese, jack cheese, and your choice of red and/or green chile evenly over one half of the omelette.

    Fold and Finish Cooking

    Carefully fold the omelette in half over the fillings. Cook for an additional 2-3 minutes until the cheese is melted and the eggs are fully cooked.

    Serve

    Serve the omelette hot with hash browns and your choice of toast or tortilla on the side.
