    Peel the Russet potatoes and cut them into thin strips or wedges, about 1/4 inch thick. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps in achieving a crispier fry.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel or paper towels to remove any excess moisture.

    Fry the Potatoes (First Batch)

    Carefully add a handful of the dried potato strips into the hot oil and fry them for about 4-5 minutes, or until they are lightly golden but not fully cooked. Use a slotted spoon to remove them and place them on a paper towel-lined plate.
