    Rinse the Rice

    In a fine mesh strainer, rinse the long-grain white rice under cold running water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

    Prepare the Ingredients

    Chop the green onions and garlic cloves. If using fresh thyme, remove the leaves from the stems. If using dried thyme, measure it out.

Cooking

    Combine Ingredients

    In a medium-sized pot, combine the rinsed rice, canned kidney beans (drained and rinsed), coconut milk, and water. Stir to mix all the ingredients evenly.

    Add Seasoning

    Add the chopped green onions, garlic, thyme, salt, black pepper, and pimento seeds to the pot. Stir to combine all the seasonings with the rice mixture.

    Bring to a Boil

    Place the pot on the stove over medium-high heat. Bring the mixture to a boil, then reduce the heat to low.

    Simmer

    Cover the pot with a lid and allow the rice and peas to simmer on low heat for about 20-25 minutes, or until the rice is tender and has absorbed all the liquid.

    Fluff and Serve

    Once cooked, remove the pot from the heat. Let it sit for 5 minutes, then remove the lid and fluff the rice with a fork. Serve warm as a side dish or a main course.
