In a large mixing bowl, combine jerk seasoning, olive oil, lime juice, minced garlic, grated ginger, brown sugar, soy sauce, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
2. Marinate the Chicken
Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
Grilling
3. Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F). Ensure the grill grates are clean and oiled to prevent sticking.
4. Grill the Chicken
Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken on the grill, skin-side down, and cook for about 6-7 minutes. Flip the chicken and cook for an additional 6-7 minutes on the other side, or until the internal temperature reaches 165°F (75°C).
5. Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before serving. This allows the juices to redistribute. Serve hot with your choice of sides.
