Preparing the Plantains

    Peeling the Plantains

    Start by peeling the ripe plantains. Cut off both ends and make a shallow cut along the length of the plantain to help loosen the skin. Remove the skin carefully and discard.

    Slice the peeled plantains diagonally into pieces about 1-inch thick. This shape will help them fry evenly and allows for a better texture.

Frying the Plantains

    Heating the Oil

    In a large skillet, heat the vegetable oil over medium heat. Allow the oil to get hot, but not smoking.

    Frying the Plantains

    Carefully add the sliced plantains to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and caramelized.

    Draining the Plantains

    Once fried, remove the plantains from the skillet and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.

Making the Dipping Sauce

    In a small bowl, combine the mayonnaise, ketchup, hot sauce, and lime juice. Mix well until all ingredients are fully incorporated.
