Prepare the Plantains
Peel the green plantains using a sharp knife. Cut off both ends, then make a shallow cut along the length of the plantain and remove the skin.

Slice the Plantains
Using a mandoline or a sharp knife, slice the plantains into thin rounds, approximately 1/8 inch thick.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Plantains
Carefully add the sliced plantains to the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.

Drain and Season
Use a slotted spoon to remove the fried plantains and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and paprika.

Prepare the Dip
In a medium bowl, combine Greek yogurt, garlic powder, lime juice, and chopped cilantro.

Mix Well
Stir the ingredients together until well combined. Taste and adjust seasoning with salt if needed.

Transfer the dip to a serving bowl and serve alongside the crispy plantain chips.
