Method
Plantains
- 1
Prepare the Plantains
Peel the ripe plantains by cutting off both ends, then making a lengthwise slit in the skin. Gently remove the skin to reveal the plantain.
- 2
Slice the Plantains
Slice the peeled plantains diagonally into about 1-inch thick pieces.
- 3
Heat the Oil
In a large frying pan, heat vegetable oil over medium heat until hot but not smoking.
- 4
Fry the Plantains
Carefully add the sliced plantains to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side until golden brown.
- 5
Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on paper towels to drain excess oil. Sprinkle with salt to taste.
Dipping Sauce
- 6
Mix the Dipping Sauce
In a small bowl, combine mayonnaise, ketchup, hot sauce, and lime juice. Stir until well blended. Adjust seasoning to your preference.
