Method

Topping

  1. 1

    Prepare the Topping

In a medium saucepan, melt 1 cup of unsalted butter over medium heat. Add 1 cup of brown sugar and stir until the mixture is smooth and bubbly.

  2. 2

    Arrange Pineapple and Cherries

Pour the melted sugar mixture into the bottom of a 9-inch round cake pan. Arrange the pineapple slices over the sugar mixture and place a maraschino cherry in the center of each pineapple slice.

Cake

  1. 3

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 4

    Mix Dry Ingredients

In a large bowl, whisk together 1.5 cups of all-purpose flour, 1 cup of granulated sugar, 2 tsp of baking powder, and 0.5 tsp of salt.

  3. 5

    Cream Butter and Add Eggs

In a separate bowl, cream together 0.5 cup of softened unsalted butter. Add in 2 eggs one at a time, mixing well after each addition. Stir in 1 tsp of vanilla extract.

  4. 6

    Combine Mixtures

Gradually add the dry ingredients to the butter and egg mixture, alternating with 0.5 cup of milk. Mix until just combined and smooth.

  5. 7

    Pour Batter

Carefully pour the batter over the arranged pineapple and cherries in the cake pan.

  6. 8

    Bake the Cake

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

  7. 9

    Cool and Invert

Allow the cake to cool in the pan for about 10 minutes. Then, run a knife around the edges and invert the cake onto a serving plate.
