    Marinate the Goat Meat

    In a large bowl, combine the goat meat with minced garlic, grated ginger, chopped Scotch bonnet pepper, ground allspice, ground turmeric, ground cumin, salt, black pepper, and lime juice. Mix well to coat the meat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.

    Sauté the Base

    In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Then add the chopped tomato and cook for an additional 3 minutes until softened.

    Add the Goat Meat

    Add the marinated goat meat to the pot and cook for about 10 minutes, stirring occasionally, until the meat is browned on all sides.

    Build the Curry Sauce

    Sprinkle the curry powder over the goat meat and stir to combine. Pour in the coconut milk and water, bringing the mixture to a boil. Reduce the heat to low and cover the pot.

    Simmer

    Let the curry simmer for about 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if the sauce gets too thick.

    Garnish and Serve

    Once the goat meat is tender, taste and adjust seasoning if necessary. Garnish with chopped fresh cilantro before serving. Serve hot with rice or flatbread.
