Method

Preparation

  1. 1

    Marinate the Goat Meat

In a large bowl, combine goat meat with curry powder, turmeric, cumin, salt, black pepper, and chili powder. Mix well to coat the meat evenly. Cover and let marinate for at least 1 hour, preferably overnight in the refrigerator.

Cooking

  1. 2

    Sauté the Aromatics

In a large pot or Dutch oven, heat vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5-7 minutes.

  2. 3

    Add Garlic and Ginger

Stir in the minced garlic and grated ginger, cooking for an additional 2-3 minutes until fragrant.

  3. 4

    Brown the Goat Meat

Add the marinated goat meat to the pot and cook until browned on all sides, about 10-15 minutes.

  4. 5

    Incorporate Tomatoes

Add the chopped tomatoes to the pot and stir well. Cook until the tomatoes break down and blend into the meat mixture, about 5 minutes.

  5. 6

    Add Coconut Milk and Spices

Pour in the coconut milk, bay leaves, and any additional salt or chili powder to taste. Stir to combine.

  6. 7

    Simmer the Curry

Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the goat meat is tender and the flavors are well combined.

  7. 8

    Garnish and Serve

Once the goat is tender, remove from heat. Discard bay leaves and garnish with fresh cilantro. Serve hot with rice or flatbread.
