Method

Preparation

  1. 1

    Prepare the Chicken

In a large bowl, season the chicken thighs with salt, black pepper, and all-purpose seasoning. Allow to marinate for at least 30 minutes, or overnight in the refrigerator for best flavor.

  2. 2

    Chop the Vegetables

While the chicken is marinating, chop the onion, bell pepper, garlic, carrot, potato, and scallions as per the ingredient list.

Cooking

  1. 3

    Brown the Chicken

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the marinated chicken thighs, skin side down, and brown on all sides, about 5-7 minutes. Remove the chicken and set aside.

  2. 4

    Sauté the Vegetables

In the same pot, add the chopped onion, bell pepper, garlic, and carrot. Sauté for about 5 minutes until the onions are translucent.

  3. 5

    Combine Ingredients

Return the browned chicken to the pot. Add the diced potato, thyme, bay leaves, paprika, cayenne pepper, soy sauce, and chicken broth. Bring to a boil.

  4. 6

    Simmer the Stew

Once boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes, or until the chicken is cooked through and tender.

  5. 7

    Finish the Dish

Add the chopped scallions and stir well before serving. Taste and adjust seasonings if necessary.
