Shellfish Preparation

1. Prepare the Shellfish

Fill a large pot with water, add salt, and bring to a boil. Add the Dungeness crab and Maine lobster, cooking for about 15-20 minutes until done. Remove and cool.

2. Cook the Tiger Prawns

In a separate pot, bring water to a boil. Add tiger prawns and cook for about 3-5 minutes until they turn pink. Remove and cool.

3. Shuck the Oysters and Clams

Using a shucking knife, carefully open the oysters and clams. Place them on a serving platter.

Tartare Preparation

4. Make the Tartare

Finely dice the fresh tuna and mix in capers, red onion, lemon juice, olive oil, salt, and black pepper. Chill in the refrigerator for 15 minutes.

Assembly and Serving

5. Assemble the Platter

Arrange the cooked Dungeness crab, Maine lobster, tiger prawns, oysters, and clams on a large serving platter. Add a bowl of tuna tartare in the center.

6. Serve

Serve immediately with lemon wedges and your choice of dipping sauces.
