Preparing the Fries

Cut and Season the Potatoes

Preheat the oven to 425°F (220°C). Cut the russet potatoes into fries. In a bowl, toss the fries with olive oil and Old Bay seasoning until evenly coated.

Bake the Fries

Spread the seasoned fries on a baking sheet in a single layer. Bake in the oven for 25-30 minutes, flipping halfway through, until golden and crispy.

Prepare the Soft-Shell Crabs

Rinse the soft-shell crabs under cold water and pat dry. Heat a skillet over medium-high heat with a little oil. Sauté the crabs for about 3-4 minutes on each side until crispy and golden brown.

Assemble the Sandwich

Slice the avocado and heirloom tomato. On each bread roll, spread a generous amount of almond pesto, add the sautéed soft-shell crab, and top with avocado and tomato slices.
