Chilled Dungeness Crab

Method

Preparation Instructions

1

Boil the Crabs

In a large pot, bring 4 liters of water and 1 cup of sea salt to a rolling boil. Carefully add the whole Dungeness crabs to the pot and cover. Boil for 8-10 minutes until the crabs turn bright orange.

2

Cool the Crabs

Once cooked, remove the crabs from the pot and place them in an ice bath (a large bowl filled with ice and water) to stop the cooking process. Let them cool for about 15-20 minutes.

3

Clean the Crabs

Once cooled, remove the crabs from the ice bath. Using a crab cracker or your hands, crack the claws and legs to make it easier to eat. Remove the shell and any unwanted parts from the body.

4

Serve

Arrange the cleaned crab on a serving platter. Garnish with lemon wedges and fresh parsley. Serve with cocktail sauce on the side.
