Cook Rice

Prepare the Rice
In a medium saucepan, combine 1 cup of uncooked rice with 2 cups of water. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is tender and the water is absorbed.

Fluff Rice
Remove from heat, let it sit covered for 5 minutes, then fluff with a fork and set aside.
Prepare Sauce

Mix Sauce Ingredients
In a small bowl, whisk together the soy sauce, minced garlic, minced ginger, sesame oil, cornstarch, and water until smooth. Set aside.
Stir Fry Vegetables

Heat Oil
In a large skillet or wok, heat a tablespoon of oil over medium-high heat.

Add Sauce
Pour the prepared sauce over the stir-fried vegetables. Stir well to coat the vegetables and cook for an additional 2-3 minutes until the sauce thickens slightly.
Serve

Plate the Dish
Spoon the cooked rice onto plates and top with the vegetable stir-fry. Serve immediately.
