Method

Prepare the Pasta

  1. 1

    Cook the Spaghetti

In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. This usually takes about 8-10 minutes.

  2. 2

    Reserve Pasta Water

Before draining, reserve about 1 cup of the pasta cooking water. Drain the spaghetti and set aside.

Prepare the Sauce

  1. 3

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until crispy and golden, about 5-7 minutes. Remove from heat.

  2. 4

    Mix the Eggs and Cheese

In a bowl, whisk together the eggs, grated parmesan cheese, and black pepper until well combined.

Combine and Serve

  1. 5

    Combine Spaghetti with Pancetta

Add the drained spaghetti to the skillet with the cooked pancetta. Toss to combine, allowing the pasta to absorb the flavors.

  2. 6

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  3. 7

    Garnish and Serve

Serve immediately, garnished with chopped fresh parsley and additional parmesan cheese if desired. Enjoy your spaghetti carbonara!
