    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over 3 tablespoons of water. Let it sit for about 5-10 minutes to soften.

    Heat Cream Mixture

    In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally, until the mixture is just about to boil. Remove from heat.

    Add Gelatin

    Whisk the softened gelatin into the warm cream mixture until fully dissolved. Stir in the vanilla extract.

    Pour into Molds

    Pour the panna cotta mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.

Berry Sauce

    Cook Berries

    In a saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Cook for 5-7 minutes, stirring occasionally, until the berries have softened and the sauce has thickened slightly.

    Cool Sauce

    Remove the sauce from heat and let it cool to room temperature. Optionally, you can blend the sauce for a smoother texture.

    Serve

    Once the panna cotta has set, remove it from the refrigerator. Top each panna cotta with the berry sauce before serving.
