Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add 8 oz of pasta and cook according to package instructions until al dente. Drain and set aside.
Cooking Vegetables

Sauté the Vegetables
In a large skillet, heat 3 tbsp of olive oil over medium heat. Add 2 minced garlic cloves and sauté for about 30 seconds until fragrant.

Add Vegetables
Add 1 cup each of sliced bell pepper, zucchini, julienned carrots, cherry tomatoes, and broccoli florets. Sauté for 5-7 minutes until vegetables are tender-crisp.
Making the Sauce

Combine Sauce Ingredients
Pour in 1 cup of vegetable broth and 2 tbsp of lemon juice into the skillet with the vegetables. Season with salt and black pepper to taste. Stir well and simmer for about 3-5 minutes.
Combining Everything

Combine Pasta and Sauce
Add the cooked pasta to the skillet and toss to combine with the vegetables and sauce. Cook for an additional 2-3 minutes to heat through.

Serve
Remove from heat and stir in 1 cup of grated Parmesan cheese until melted and evenly distributed. Serve immediately, garnished with additional cheese if desired.
