Prepare the Rice
In a medium saucepan, combine 1 cup of white rice with 2 cups of water and a pinch of salt. Bring to a boil over high heat.

Cook the Rice
Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Season the Bronzini
While the rice is cooking, season both sides of the bronzini fillets with salt and black pepper.

Sear the Bronzini
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, carefully place the bronzini fillets skin-side down in the skillet.

Cook the Bronzini
Cook for about 4-5 minutes until the skin is crispy and golden. Carefully flip the fillets and cook for another 3-4 minutes until the fish is cooked through and flakes easily with a fork.

Prepare the Ponzu Sauce
In a small bowl, pour 4 tablespoons of ponzu sauce. This will be used as a drizzle over the bronzini.

Prepare the Vegetables
In another pot, steam the seasonal vegetables over boiling water for about 5-7 minutes until tender but still vibrant.

Assemble the Bento Box
In a bento box or plate, serve the cooked rice, bronzini fillet drizzled with ponzu sauce, steamed vegetables, a cup of fresh fruit, and a side of mixed salad greens topped with your choice of salad dressing.
