Yakisoba Noodle Recipe
Stir fried yellow noodle with onion, red bell pepper, mushrooms, corn, spinach, bok choi. Served with salad. Choice of Tofu, Chicken or Seafood. (GFO, VO)

Prepare the Ingredients
Begin by preparing all the ingredients. Slice the onion and red bell pepper into thin strips. Clean and slice the mushrooms. Rinse the spinach and bok choy under cold water, then chop the bok choy into bite-sized pieces. If using tofu, chicken, or seafood, cut into appropriate sizes.

Cook the Protein
In a large frying pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu, chicken, or seafood and stir-fry until cooked through and golden brown. Remove from the pan and set aside.

Stir-Fry the Vegetables
In the same pan, add the remaining tablespoon of vegetable oil. Add the onion and stir-fry for 2 minutes until slightly softened. Then, add the red bell pepper and mushrooms, cooking for another 3 minutes until they begin to soften.

Add Noodles and Sauce
Add the cooked yakisoba noodles to the pan along with the cooked protein. Pour the soy sauce over the mixture, and stir-fry everything together for another 3-4 minutes until heated through. Season with salt and black pepper to taste.

Serve
Once everything is well combined and heated, remove from heat. Serve hot with a side salad.
