Making the Pie Crusts

    Prepare the Dough

    In a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of unsalted butter (cut into small chunks), 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add 4 tablespoons of ice water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water.

    Chill the Dough

    Divide the dough into two balls, flatten them into disks, wrap in plastic wrap, and refrigerate for at least 1 hour or until firm.

Preparing the Fillings

    Prepare Apple Filling

    Peel, core, and slice 4 cups of fresh apples. In a bowl, mix the apples with 1 cup of granulated sugar, 1 teaspoon of cinnamon, and set aside.

    Prepare Blueberry Filling

    In a separate bowl, combine 2 cups of fresh blueberries with 2 tablespoons of lemon juice and set aside.

    Prepare Strawberry Filling

    Slice 2 cups of fresh strawberries and mix with 2 tablespoons of cornstarch and 1 teaspoon of vanilla extract.

    Prepare Chocolate Pecan Filling

    In a bowl, combine 1 cup of chocolate chips and 1 cup of chopped pecans.

    Prepare Pumpkin Filling

    In a bowl, mix 1 cup of pumpkin puree with 1 teaspoon of nutmeg.

Assembling and Baking the Pies

    Roll Out the Crust

    Preheat your oven to 375°F (190°C). Roll out each disk of chilled dough on a floured surface to fit a 9-inch pie pan.

    Fill the Pies

    Place the rolled dough into the pie pan, then fill with your choice of prepared fillings. You can combine different fillings in one pie or create separate pies for each flavor.

    Top and Bake

    If desired, roll out a top crust and place it over the filled pie, sealing the edges. Cut slits in the top crust for steam to escape. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.

    Cool and Serve

    Remove the pies from the oven and let them cool on a wire rack before serving.
