    Sear the Meat

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the chuck roast with salt and black pepper, then sear it in the hot oil until browned on all sides (about 4-5 minutes per side).

    Sauté Vegetables

    Remove the roast and set it aside. In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent (about 3-4 minutes).

    Add Broth and Herbs

    Return the roast to the pot. Add the beef broth, thyme, and bay leaf. Bring to a simmer.

    Add Vegetables

    Add chopped potatoes and carrots to the pot. Cover and reduce heat to low.

    Cook

    Let the pot roast cook for about 3 to 4 hours, or until the meat is fork-tender and the vegetables are cooked through.

    Serve

    Remove the bay leaf and slice the roast. Serve the meat with the potatoes and carrots on the side.
