    Prepare the Chicken

    In a large pot, add the chicken thighs and cover with chicken broth. Bring to a boil, then reduce heat and simmer for about 20 minutes until the chicken is cooked through.

    Remove the cooked chicken and set aside. In the same pot, add diced carrots, celery, onion, and garlic. Sauté for about 5 minutes until the vegetables are tender.

    Combine Ingredients

    Shred the cooked chicken and return it to the pot. Add thyme, bay leaf, and season with salt and pepper to taste. Allow to simmer for another 10 minutes.

    Make the Dumplings

    In a separate bowl, combine 2 cups of flour, 1 tablespoon of baking powder, and a pinch of salt. Mix in 1 cup of milk and 2 tablespoons of melted butter until a dough forms.

    Drop spoonfuls of the dumpling mixture onto the simmering chicken and vegetable mixture. Cover and cook for an additional 15 minutes, until the dumplings are fluffy and cooked through.
