    Sauté the Vegetables

    In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced mushrooms, onions, and squash. Sauté for about 5 minutes until they begin to soften.

    Add Remaining Vegetables

    Stir in the artichokes, broccoli, sugar snap peas, and both red and green bell peppers. Cook for an additional 5-7 minutes, stirring occasionally, until all vegetables are tender but still crisp.

    Prepare the Vinaigrette

    In a small bowl, mix together 2 tablespoons of pesto and 2 tablespoons of honey-mustard dressing. Adjust to taste.

    Assemble the Salad

    In a large serving bowl, layer the mixed greens and top with the sautéed vegetables and halved cherry tomatoes.

    Dress the Salad

    Drizzle the pesto and honey-mustard vinaigrette over the salad. Toss gently to combine.
