Prepare the Sirloin
Take the USDA Choice beef sirloin out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

Season the Beef
Generously season both sides of the sirloin with salt, black pepper, and garlic powder. If using, add fresh rosemary on top.

Heat the Pan
In a large skillet, heat olive oil over medium-high heat until it shimmers.

Cook the Sirloin
Place the seasoned sirloin in the hot skillet. Cook for about 4-5 minutes on one side, then flip and cook for an additional 4-5 minutes for medium-rare, or longer if desired.

Rest the Meat
Remove the sirloin from the skillet and let it rest on a cutting board for 5 minutes to allow the juices to redistribute.

Slice the sirloin against the grain and serve hot with your choice of sides.
