Prepare the Salsa Mayo
In a small bowl, combine the mayonnaise and salsa. Mix well and set aside.

Grill the Chicken
Preheat a grill or grill pan over medium heat. Brush the chicken breasts with olive oil and season with salt and black pepper. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Once cooked, remove from grill and let rest for a few minutes.

Toast the Buns
While the chicken is resting, place the hamburger buns on the grill or in a toaster until they are lightly toasted.

Assemble the Sandwich
On the bottom half of each toasted bun, layer the lettuce, sliced tomato, and onion. Place the grilled chicken breast on top, followed by a slice of pepper jack cheese. Spoon the salsa mayo generously over the cheese, then cover with the top half of the bun.

Cut the sandwich in half if desired, serve immediately, and enjoy!
