Method

Egg Preparation

  1. 1

    Prepare the Salt Brine

In a saucepan, combine 1 cup of salt with 3 cups of water. Stir well until the salt is fully dissolved. This will be your brine.

  2. 2

    Prepare the Eggs

Gently clean the duck eggs with a soft cloth to remove any dirt. Avoid using water as it may introduce bacteria.

  3. 3

    Soak the Eggs

Place the cleaned duck eggs carefully into the brine, ensuring they are fully submerged. If needed, place a clean weight on top to keep them submerged.

  4. 4

    Cover and Store

Cover the container with a lid and store it in a cool, dark place for at least 3 weeks. The longer the eggs sit, the saltier they will become.

Flavoring (optional)

  1. 5

    Add Flavor (Optional)

If you wish to add additional flavors, include star anise, bay leaves, and crushed garlic cloves into the brine before soaking the eggs.

Final Preparation

  1. 6

    Remove and Rinse

After 3 weeks, remove the eggs from the brine. Rinse them thoroughly under cold running water to remove excess salt.

  2. 7

    Boil the Eggs

Place the rinsed eggs in a pot of boiling water. Boil for 10-12 minutes for hard-boiled eggs.

  3. 8

    Cool and Serve

Once boiled, transfer the eggs to an ice bath to cool for a few minutes, then peel and serve.
