Preparation Steps
- 1
Prepare the Brine
In a large bowl, combine the kosher salt, black peppercorns, crushed garlic cloves, and fresh thyme. Pour in the water and stir until the salt is fully dissolved.
- 2
Brine the Duck
Place the whole duck in a large container or brining bag. Pour the brine over the duck, ensuring it is fully submerged. If necessary, weigh the duck down with a plate. Seal the container or bag and refrigerate for at least 12 hours, or overnight for best results.
- 3
Rinse and Dry
After brining, remove the duck from the brine and rinse it under cold water to remove excess salt. Pat the duck dry with paper towels.
- 4
Roast the Duck
Preheat your oven to 375°F (190°C). Place the duck on a roasting rack in a roasting pan. Roast the duck for about 1.5 to 2 hours, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- 5
Rest and Serve
Once roasted, let the duck rest for 10-15 minutes before carving. Serve with your choice of sides.
