    Soak the Beans

    Rinse the red kidney beans under cold water. Place them in a large bowl, cover with water, and let soak overnight or for at least 6-8 hours.

    Chop the Vegetables

    Dice the onion, green bell pepper, and celery. Mince the garlic cloves.

    Prepare the Sausage (if using)

    Slice the Andouille sausage into bite-sized pieces.

Cooking

    Cook the Beans

    In a large pot, drain the soaked beans and add them along with 6 cups of fresh water. Bring to a boil, then reduce heat to a simmer.

    Add Vegetables and Seasoning

    Add the chopped onion, green bell pepper, celery, minced garlic, bay leaves, dried thyme, cayenne pepper, salt, and black pepper to the pot. Stir well.

    Cook the Mixture

    Cover the pot, and let the beans simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and check the water level, adding more if necessary.

    Add Sausage (if using)

    If using Andouille sausage, add it to the pot during the last 30 minutes of cooking.

Serving

    Serve with Rice

    Once the beans are tender, remove the bay leaves. Serve the red beans in a cup or bowl over cooked white rice.
