Marinate the Alligator
In a bowl, combine the buttermilk, Cajun seasoning, salt, and black pepper. Add the alligator meat, ensuring it's fully submerged. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for better flavor.

Prepare the Breading
In a separate bowl, mix the all-purpose flour and cornstarch together. This will create a light and crispy batter.

Heat the Oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Bread the Alligator
Remove the alligator meat from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the flour-cornstarch mixture, ensuring they are well coated. Shake off any excess flour.

Fry the Alligator
Carefully place the breaded alligator pieces into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until they are golden brown and cooked through. Use a slotted spoon to remove the pieces and place them on a paper towel-lined plate to drain excess oil.

Serve the fried alligator hot with lemon wedges on the side for squeezing over the meat.
