    Preparing the Ingredients

    Begin by prepping all the ingredients for the soup.

    Rinse the whole chicken under cold water and pat it dry with paper towels. Remove any excess fat.

    Soak the dried black mushrooms in warm water for about 30 minutes until they are rehydrated. Drain and slice them.

    Peel and slice the fresh ginger into thin pieces.

    Rinse the wolf-berry fruits and dried dates and set aside.

    Cooking the Soup

    Now, it's time to combine everything in a pot.

    In a large pot, add the whole chicken and pour in 2 liters of water.

    Add the soaked black mushrooms, sliced ginger, ginseng root, wolf-berry fruits, and dried dates into the pot.

    Season the soup with salt and black pepper, and bring it to a boil over high heat.

    Once boiling, lower the heat to a simmer and cover the pot. Let it cook for about 1.5 hours, or until the chicken is tender and fully cooked.

    After cooking, remove the chicken from the pot and let it cool slightly before shredding the meat off the bones.

    Return the shredded chicken meat to the pot and stir in the soy sauce.

    Chop the green onions and sprinkle them into the soup just before serving.

    Taste the soup and adjust seasoning if necessary, adding more salt or pepper to taste.
