    Wash and Cut Potatoes

    Thoroughly wash the Russet potatoes under running water to remove any dirt. Pat them dry with a towel. Cut each potato lengthwise into wedges, about 1/2 inch thick to resemble waffle shapes.

    Soak Potatoes

    Place the cut potato wedges in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and results in crispier fries.

    Drain and Dry Potatoes

    After soaking, drain the water and lay the potato wedges on a clean kitchen towel or paper towel. Pat them dry thoroughly to remove as much moisture as possible.

Frying

    Heat the Oil

    In a large, deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature for frying.
