    Wash the fresh spinach thoroughly under cold water. Remove any tough stems and roughly chop the leaves.

    Finely mince the garlic cloves and slice the green onions, using both the white and green parts.

Cooking

    Sauté the Spinach and Aromatics

    In a large skillet over medium heat, add a small amount of oil or butter. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 3-4 minutes. Stir in the green onions and cook for an additional 1-2 minutes. Remove from heat and let cool slightly.

    In a large mixing bowl, combine the cream cheese, sour cream, shredded parmesan, shredded mozzarella, salt, black pepper, and red pepper flakes. Mix until smooth and well combined.
