Prepare Seafood

    Prepare Boom Boom Shrimp (Optional)

    If using boom boom shrimp, marinate shrimp in a mixture of mayonnaise, hot sauce, and spices for at least 30 minutes. Then, deep fry in hot oil until golden and crispy.

    Fry the Shrimp

    For fried shrimp, season the shrimp with salt and pepper. Dredge in seasoned flour (flour mixed with garlic powder, cayenne pepper, and paprika). Deep fry in hot oil until golden brown.

    Fry the Catfish

    For fried catfish, season fillets with salt and pepper. Dredge in cornmeal and deep fry until crispy and cooked through.

Prepare Vegetables & Condiments

    Slice Tomato

    Wash and slice the tomato into thin slices.

    Wash and shred the lettuce into bite-sized pieces.

    Slice pickles into thin rounds or spears, depending on preference.

Assemble Poboy

    Cut Poboy Bread

    Slice the poboy rolls lengthwise without cutting all the way through to create a pocket.

    Fill the Poboy

    Layer the fried seafood of choice (boom boom shrimp, fried shrimp, or fried catfish) into the bread, followed by slices of tomato, lettuce, and pickles. Spread mayonnaise generously on the inside.

    Prepare waffle fries according to package instructions, typically by baking or frying until crispy.
