Method

Preparation of Vegetables

  1. 1

    Chop the Vegetables

Wash the cabbage, carrots, radishes, and cucumbers thoroughly under cold running water. Chop the cabbage into thin strips, slice the carrots into thin rounds, cut the radishes into quarters, and slice the cucumbers into half-moons.

  2. 2

    Combine Vegetables

In a large mixing bowl, combine the chopped cabbage, carrots, radishes, and cucumbers. Toss them together to ensure an even mix.

Salting and Seasoning

  1. 3

    Add Salt and Sugar

Sprinkle the salt and sugar over the mixed vegetables. Gently toss the vegetables to evenly distribute the salt and sugar.

  2. 4

    Let It Sit

Let the salted vegetables sit for about 15 minutes, allowing the salt to draw out excess moisture.

Final Seasoning

  1. 5

    Prepare Dressing

While the vegetables are resting, finely chop the garlic and ginger. In a small bowl, combine the rice vinegar and sesame oil, and add the chopped garlic and ginger.

  2. 6

    Mix Dressing with Vegetables

After 15 minutes, pour the dressing over the salted vegetables. Toss everything together to ensure the vegetables are well-coated with the dressing.

Serving

  1. 7

    Serve

Transfer the salted vegetables to a serving dish. They can be served immediately or chilled in the refrigerator for about 30 minutes for enhanced flavor.
