Preparation of Jellyfish

Soak Jellyfish
In a large bowl, submerge the dried jellyfish in cold water. Allow it to soak for about 4-6 hours, or until it becomes soft and pliable.

Drain and Rinse
Once the jellyfish is fully rehydrated, drain the water and rinse the jellyfish thoroughly under cold running water to remove excess salt.

Salt the Jellyfish
Place the cleaned jellyfish in a bowl and sprinkle the salt evenly over it. Mix to ensure all parts are evenly coated. Let it sit for an additional 30 minutes.
Mixing and Dressing

Prepare the Dressing
In a separate bowl, combine the rice vinegar, soy sauce, sesame oil, chili oil, and sugar. Whisk until the sugar is dissolved and the mixture is well combined.

Peel and finely chop the garlic cloves and ginger. Add them to the dressing mixture.

Finely chop the green onions and add them to the dressing mixture as well.
