If using, add the star anise and sliced ginger to the brine mixture. Bring the brine to a boil, then remove from heat and let it cool completely.
Brining the Duck

Prepare the Duck
Rinse the whole duck under cold water and pat it dry with paper towels.

Submerge the Duck
Once the brine is cool, submerge the duck in the brine solution, ensuring it is fully covered. If necessary, place a weight on top to keep it submerged.

Brining Time
Cover the pot and refrigerate for 24 to 48 hours, depending on how salty you prefer your duck.
Cooking the Duck

Preheat Oven
Preheat your oven to 375°F (190°C).

Remove Duck from Brine
After the brining period, carefully remove the duck from the brine and rinse it under cold water to remove excess salt.

Dry the Duck
Pat the duck dry with paper towels, then place it on a roasting rack in a roasting pan.

Roast the Duck
Roast the duck in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
