For the Blackened Redfish

    Prepare the Redfish

    Rinse the redfish fillets under cold water and pat them dry with paper towels.

    Coat each fillet generously with blackening seasoning on both sides.

    Heat the olive oil in a skillet over medium-high heat. When hot, add the fillets and cook for 3-4 minutes on each side, or until the fish is blackened and cooked through.

For the Slaw

    In a large mixing bowl, combine the shredded cabbage and grated carrot.
