Lemon Butter Chicken

    Prepare the Chicken

    Preheat the grill to medium-high heat. Season the chicken breasts with salt and black pepper on both sides.

    Make Lemon Butter Sauce

    In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute. Stir in the lemon juice and chopped parsley, and remove from heat.

    Grill the Chicken

    Place the seasoned chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the lemon butter sauce during the last few minutes of grilling.

    Serve

    Once cooked, remove the chicken from the grill and pour the remaining lemon butter sauce over the top before serving.

Cheddar Grits

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add salt.

    Cook Grits

    Gradually stir the grits into the boiling water. Reduce heat to low and cook, stirring frequently, until thickened, about 20-25 minutes.

    Add Cheese and Butter

    Once the grits are cooked, stir in the shredded cheddar cheese and 2 tablespoons of butter until melted and creamy. Adjust seasoning to taste.

Broccoli

    Prepare Broccoli

    While the chicken and grits are cooking, bring a pot of salted water to a boil. Add the broccoli florets and cook for 3-4 minutes until tender but still bright green.

    Sauté Broccoli

    Drain the broccoli and then heat olive oil in a skillet over medium heat. Add the broccoli and season with salt. Sauté for 2-3 minutes until heated through.
