Cooking the Pasta

In a large pot, bring 4 cups of salted water to a rolling boil.

Add the pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes, until al dente.

Once cooked, drain the pasta in a colander and set aside, reserving a little pasta water (about 1/4 cup).

Slowly pour in the heavy cream, stirring constantly, and bring to a gentle simmer.

Stir in the grated Parmesan cheese, salt, black pepper, and a pinch of nutmeg if using. Mix well until the cheese is melted and the sauce is smooth.

Add the drained pasta to the sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
