Method
Preparation of Shrimp

Prepare the Shrimp
Ensure that the jumbo shrimp are peeled and deveined. Pat them dry with a paper towel to remove excess moisture.
Batter Preparation

Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Whisk together until well-blended.

Add Water
Gradually add the cold water to the dry ingredients while whisking until a smooth batter forms. It should be thick enough to coat the shrimp.
Frying Shrimp

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry
Dip each shrimp into the batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and cooked through.

Drain
Using a slotted spoon, remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.
Blackening (Optional)

If opting for blackened shrimp, sprinkle the blackening seasoning over the shrimp before frying. Ensure even coverage.
