Cut the boneless chicken breasts into large pieces, about the size of your palm. Pat them dry with paper towels for better batter adhesion.

In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.

Dip each piece of chicken into the egg mixture, allowing any excess to drip off, then dredge it in the flour mixture until fully coated. Set aside on a plate.
