Cheese Preparation

    Heat the Milk

    In a large pot, pour the whole milk and heat it over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Once the milk has reached the desired temperature, remove it from the heat and add the white vinegar. Stir gently for about 1 minute, then let it sit undisturbed for 5 to 10 minutes, allowing curds to form.

    Add Rennet

    Dilute the rennet in a small amount of cool, non-chlorinated water. Add this to the curdled milk and stir gently for about 30 seconds. Let it sit undisturbed for another 5 to 10 minutes until curds form.

    Cut the Curd

    Using a long knife, cut the curds into 1-inch cubes. Allow them to sit for 5 minutes to firm up.

    Heat the Curds

    Gently heat the curds to 105°F (40°C) while stirring occasionally. This should take about 10 minutes.

    Drain the Curds

    Line a colander with cheesecloth and pour the curds into it. Allow the whey to drain for about 5 minutes.

    Knead and Stretch

    Transfer the drained curds to a bowl and add salt. Using your hands, knead and stretch the curds for about 5 minutes until they become smooth and elastic.

    Form Logs

    Divide the mozzarella into 3 equal portions and shape each portion into logs. Place them into a bowl of ice water to cool and firm up.

    In a small bowl, whisk together olive oil, balsamic vinegar, and cracked black pepper.
