Prepare the Shrimp
In a large bowl, combine the shrimp with 1 tablespoon of Cajun seasoning and salt. Let it marinate for about 15 minutes.

Set Up Breading Station
In three separate shallow dishes, place the flour in one, the cornmeal mixed with the remaining Cajun seasoning in the second, and whisk the eggs with buttermilk in the third.

Bread the Shrimp
Take each shrimp, dip it in the flour, then the buttermilk mixture, and finally coat it with the cornmeal mixture. Set aside on a plate.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully place the breaded shrimp in the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Slice the French bread rolls lengthwise, being careful not to cut all the way through.

Spread a generous amount of mayonnaise on the inside of each roll. Layer with shredded lettuce, tomato slices, fried shrimp, and pickles.

Finish with Hot Sauce
Drizzle hot sauce over the assembled poboys according to your preference.
