Marinate the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes. This will help tenderize the fish and add flavor.

Prepare the Breading
In a shallow dish, mix together the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper.

Bread the Catfish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated. Place on a plate and let rest for 10 minutes.

Fry the Catfish
In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the breaded catfish fillets in batches for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into waffle shapes using a waffle fry cutter or a knife.

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil to fully submerge the fries.

Carefully add the waffle-cut potatoes to the hot oil in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
