Main Ingredients

Method

Preparation

  1. 1

    Chop the Vegetables

Finely chop the onion, green bell pepper, celery, and garlic. This will provide the base for the étouffée.

Cooking

  1. 2

    Make the Roux

In a large pot, melt the unsalted butter over medium heat. Once melted, add the all-purpose flour. Stir continuously for about 10-15 minutes until the mixture turns a light brown color.

  2. 3

    Sauté the Vegetables

Add the chopped onion, green bell pepper, celery, and garlic to the roux. Sauté for about 5 minutes until the vegetables are tender.

  3. 4

    Add the Crawfish and Broth

Stir in the crawfish tails, chicken broth, Cajun seasoning, salt, black pepper, and bay leaf. Bring to a simmer, then reduce heat to low and let it cook for about 20 minutes.

  4. 5

    Finish with Hot Sauce

Add hot sauce to taste, adjusting for spice preference. Remove the bay leaf before serving.

Serving

  1. 6

    Serve the Étouffée

Spoon the crawfish étouffée over a bowl of cooked white rice and enjoy!
