Catfish Fillets
Sandwich Components
Method
Prepare the Catfish
- 1
Marinate the Catfish
In a bowl, combine buttermilk and hot sauce. Add the catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.
- 2
Prepare the Coating
In a shallow dish, mix together cornmeal, flour, salt, black pepper, paprika, and cayenne pepper.
- 3
Coat the Catfish
Remove the catfish from the buttermilk marinade, allowing excess liquid to drip off. Dredge each fillet in the cornmeal mixture, pressing lightly to adhere.
Fry the Catfish
- 4
Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Catfish
Carefully add the coated catfish fillets to the hot oil in batches. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Poboy
- 6
Prepare the Sandwich
Slice the French bread/po'boy rolls lengthwise without cutting all the way through. Spread mayonnaise on both sides of the bread.
- 7
Add Fillings
Layer the fried catfish fillets on the bread, followed by lettuce, sliced tomatoes, pickles, and a squeeze of lemon juice.
- 8
Serve
Close the sandwiches and serve immediately. Enjoy your delicious catfish poboys!
