Prepare the Ingredients
Start by preparing all the ingredients. Grill the chicken breast and slice it into strips. Chop the andouille and boudin sausage into bite-sized pieces. Slice the onions thinly.

Assemble the Cajundillas
On a chipotle tortilla, layer the grilled chicken, andouille sausage, boudin sausage, caramelized onions, and jack cheese. Fold the tortilla in half.

Red Beans & Rice

Prepare the Red Beans
Soak the red beans overnight or for at least 6 hours. Drain and rinse.

Add the Beans and Broth
Add the soaked red beans and chicken broth to the pot. Stir in the cajun seasoning, salt, and black pepper. Bring to a boil.

Simmer the Beans
Reduce the heat to low and let it simmer for about 1-1.5 hours, or until the beans are soft. Add additional water if necessary.

Cook the Rice
In a separate pot, cook the white rice according to package instructions using water or additional chicken broth for flavor.
